Ingredients
  

  • Tortilla chips
  • Shredded cheese (I used a mixture of Pepper Jack and Mexican)
  • Tomatoes, diced
  • Olives, diced
  • Onion, diced
  • Frozen fire-roasted corn, thawed and patted dry
  • Black beans (drained, rinsed and patted dry)
  • Kidney beans (drained, rinsed and patted dry)
  • Pickled jalapeños
  • Avocado
  • Sour cream (optional)

Instructions
 

  • Preheat oven to 400 degrees
  • Place parchment paper on rimmed sheet pan(s)
  • Lay tortilla chips in a single layer on sheet pan(s)
  • Sprinkle cheeses on top
  • Layer on all other ingredients except olives, jalapeños, avocado and sour cream
  •  Place in oven and bake until cheese is melted, about 8-10 minutes
  • Remove from oven and top with olives, jalapeños, avocado and sour cream (if using)
  • Serve on sheet pan for everyone to enjoy
