Today’s recipe has been all over the internet, social media, and TV, so of course I had to try to make it. I eat eggs almost every day, and am always looking for ways to change the recipe up a bit. These were so delicious and would be a perfect brunch recipe to make for your guests. Try this recipe for an elevated egg recipe that just looks fancy.
4 Large Eggs
1/2 c. freshly grated Parmesan
3 tbsp. finely chopped fresh chives
Salt and Pepper

Coud Egg Ingredients
Preheat oven to 450
Line a large baking sheet with parchment paper
Separate egg whites and egg yolks, placing the egg whites in a large bowl and the yolks in a small bowl
Season the egg whites with salt and pepper
Using a whisk or a hand mixer, beat the egg whites until stiff peaks form (I used a hand mixer and it took about 5-7 minutes)

Stiff peaks formed!
Gently fold in Parmesan and chives, reserving 1/2 TSP for garnish
Create 4 mounds of egg whites on the prepared baking sheet and indent the centers of each to look like nests

Forming the clouds
Bake until slightly golden, about 3 minutes

Ready to add the yolks
Carefully add an egg yolk to the center of each egg white cloud
Season yolk with salt and pepper

Ready to go into the oven
Bake until the yolks are just set, about 3 minutes more
Serve with fruit and enjoy!
