Earl Grey and Lemon Drizzle Cake

It was my coworkers birthday last week and one thing she and I have in common is our affinity for tea.  I wanted to bake her something special, so I was thinking of a tea cake.  But, since I had already made a Chocolate Chocolate Chip Matcha Cake for you here on the blog (which was darn good), I decided on an earl grey cake and to spruce it up, I added a lemon drizzle.  It came out better than I could have imagined and the birthday girl (and everyone she shared it with) enjoyed it!  If you love to drink tea, you can now eat it too!

Cake:

1/2 cup butter

1 cup sugar

2 eggs

1/2 tsp vanilla

2 cups flour

4 tsp baking powder

1 cup whole milk

4 Earl Grey Tea bags

Lemon Drizzle:

½ cup powdered sugar

1 tbsp lemon juice

½ tsp vanilla extract

Instructions:

Preheat oven to 350 degrees

Heat up the 1 cup of milk in a saucepan on the oven then add the 4 tea bags to the hot milk and let steep at least 10 minutes, then set aside
 
In a mixing bowl, cream together the butter and sugar
 
Add the eggs, one at a time
 
Then add vanilla, and mix well

In a separate bowl, combine the flour, and baking powder
 
To the butter mix, add 1/3 of the flour mix, then 1/2 of the tea milk
 
Repeat until all combined

Spray bundt pan with cooking spray, then pour batter into pan

Bake at 350 degrees for 45 minutes, or until a toothpick inserted in the centre comes out clean
 
Once the cake has baked, let it cool for about 10 minutes in the pan
 
While cake is cooling, mix together lemon drizzle ingredients
 
Turn the cake out onto a plate and drizzle lemon over top
 
Ready to slice up!
