Meatless Monday: BFree Avocado Pita

Simply said, I love avocado toast.  And, I love it even more when topped with a poached egg.  So, when BFree sent me pita bread, I knew immediately that I was going to make a twist on avocado toast…on pita bread!  BFree is a line of low fat, non-GMO, Gluten-free, Egg-free, soy-free, and more.  Try the recipe below for an avocado toast recipe!

2 BFree Pita Bread Slices

1/2 cup Cherry Tomatoes

1 Avocado

2 Poached Eggs (Instructions HERE)

Salt, Pepper, Cayenne Pepper, Garlic Salt

Juice of 1/2 Lime

EVOO

Ingredients

Ingredients

Remove avocado from skin and mash with spices (minus cayenne pepper) and lime until smooth consistency 

Pour EVOO in a skillet on medium heat

Cut the cherry tomatoes in half

Once the pan is hot, add cherry tomatoes 

Stir in spices and cook 5 -8 minutes

Spoon avocado over Pita (you can toast if you would like!)

Top with tomatoes

Serve and enjoy!
