Meatless Monday: Bean Meatloaf

I am always looking for hearty Meatless Monday recipes that will make me forget that I’m not eating meat, especially since I’ve been trying to go meatless a lot more than just Mondays.  This recipe fits that description.  It takes an old favorite (meatloaf), but makes it meatless (substitutes beans!).  Even if you are a meat fan, I hope you give today’s recipe a try!

2 Cans of Beans (I used one chickpea and one Great Northern beans)

1/2 to 1 onion, diced

2 celery stalks, chopped

2 carrots, diced

2 garlic cloves, minced

2 cups panko breadcrumbs

1/2 cup unflavored soy or almond milk

3 tbsp. Worcestershire saucestyle=border:none

2 tbsp. soy sauce or tamari

2 tbsp. olive oil

2 tbsp. ground flax seedsstyle=border:none

2 tbsp. tomato paste

Salt

1 tsp smoked paprika

1 tsp chipotle pepper

1/2 tsp cayenne pepper

1/4 tsp. black pepper

For the Maple Glaze:

1/4 cup tomato paste

2 tbsp maple syrup

1 tbsp apple cider vinegar

1 tbsp soy sauce

1 tsp paprika

I didn’t have any breadcrumbs, but I did have a loaf of BFree Brown Seeded Sandwich Loaf, so I decided to make my own breadcrumbs.  I lightly toasted a few slices of the bread and pulsed them in a food processor until they were breadcrumbs.  If you missed my post last Monday about BFree Avocado Toast (recipe HERE), BFree is a line of low fat, non-GMO, Gluten-free, Egg-free, soy-free, and more.  The Brown Seeded Loaf also has high fiber, no added sugar, and dairy free!

Preheat oven to 375

Lightly oil a 9 inch loaf pan

Working in batches if needed, place all meatloaf ingredients into food processor bowl and pulse until beans are broken up and ingredients are well mixed, stopping to scrape down sides of bowl as needed

If working in batches, transfer each batch to a large mixing bowl when complete and then mix

Press mixture into prepared loaf pan and bake 30 minutes

While meatloaf bakes, stir glaze ingredients together in a small bowl

Remove loaf from oven after 30 minutes and spoon glaze overtop of loaf

Bake another 20-25 minutes

Remove from oven and allow to cool at least 15 minutes before cutting
