Tuna Salad on Sweet Potato Toast

About a year ago, avocado toast was all the rage…pretty much avocado on toast with a few added ingredients.  My favorite is a poached egg, but a poached egg makes everything better.  Recently, I’ve been seeing a new popular toast…sweet potato toast.  Since I’ve found this new trend, I’ve been making it non-stop.  I put one of my favorite things on top; tuna salad with homemade mayo!  Follow the recipes below and I hope you enjoy.

1 Can Tuna

2 Stalks Celery, diced

1/4 White Onion, diced

1 Medium Sweet Potato, as uniformly round as possible

2 TBSP Mayo (Recipe HERE)

1 TBSP Mustard

Juice of 1/2 Lemon

Garlic Salt, Salt, Pepper

EVOO

Preheat oven to 400 degrees

Cut the top and bottom off of the sweet potato and a small portion (about 1/4 inch) off each side of the sweet potato to form into a block

Cut 1/2 inch slices 

Line a rimmed cookie sheet with tin foil, then place a cooling rack and spray with cooking spray

Drizzle EVOO on each of the sweet potato slices and sprinkle with spices

Flip and repeat

Bake in oven for 15-18 minutes

Open and drain tuna

Rinse with water and drain 

Spoon tuna into a bowl and add other ingredients

Mix until thoroughly combined

Once sweet potatoes are finished cooking, remove from oven

They should still be a bit firm

Let cool for 10 minutes

Ready to spoon the tuna salad on the sweet potato toasts
