Meatless Monday: Homemade Quick Pickles

I love pickles and I used to have a pickle party when I was younger!  Yes, I would go over to my aunt’s house and we would make homemade pickles.  Recently, I have been trying to eat very healthy and looked at the ingredients of pickles.  There were some with sugar, some with acids, so I decided I wanted to make my pickles with only the ingredients I want.  You can let the cucumbers marinate for as little as 15 minutes, or overnight if you want a stronger vinegar flavor.  It’s up to you!

2 Small Persian Cucumbers

2 TBSP White Vinegar

1 TBSP Apple Cider Vinegar

Pinch of salt, pepper, and garlic salt

In a plastic container or a baking dish, combine vinegars and spices

Whisk to combine 

Cut cucumber in slices and lay in a single layer 

Ready to refrigerate

Drain and serve with main dish of choice
