Meatless Monday: Crock Pot Mashed Cauliflower

I thought today’s recipe would be an easy, light, and healthy start to your Saint Patrick’s Day dinner menu.  Potatoes are usually the chosen veggie of Saint Patrick’s Day, but sometimes with the corned beef, the beer, and dessert, I don’t want to load up on potatoes, but I do want the texture.  So, I am providing you with a mashed cauliflower recipe that is so easy that you throw your ingredients into a crock pot and forget about it for 3 hours.  I hope you give this recipe a try…for Saint Patrick’s Day or not!

1 Large Head of Cauliflower

6 Cloves Garlic, peeled

4 TBSP Minced Herbs (I used chives, thyme, and parsley)

1 Cup Broth

4-6 Cups Water

3 TBSP Butter

Salt and Pepper to taste

Cut and peel and leaves from the cauliflower and cut into florets

Place florets into slow cooker 

Top with garlic cloves, broth, and enough water to cover the cauliflower

(I also threw in a pinch of salt and a few of the copped herbs, but you will add most of the herbs at the end)

Cook on high heat for 3 hours or until the cauliflower is tender

Drain the water and broth

Add butter to cauliflower and using an immersion blender, mash cauliflower

Season with salt and pepper and mix in fresh herbs
