2 Ingredient Dinner: Salmon Avocado Rolls

If you know me, you know I started a new job last week in food and beverage public relations (formerly fashion and accessory PR), which is perfect for me!  While I love it, I am going to admit that it does take a bit more of my time and energy.  So, I am not going to tell you how many times I’ve had this dinner over the past week and a half.  It’s slightly embarrassing because it’s been so often!  It is essential 2 ingredients, minus kitchen staples such as lemon juice and spices.  If you like salmon and avocado, you will be eating this as often as I have in the past week and a half!

 

1/2 Avocado

5-8 Slices of  Smoked Salmon

Lemon Juice 

Salt and Pepper

Spread slices of smoked salmon on plate

Sprinkle salt and pepper

Assembling!

Add a slice of avocado to each piece of salmon

Squeeze a bit of lemon juice over salmon and avocado

Roll salmon over avocado to make a salmon roll

Squeeze lemon juice over roll and sprinkle with salt and pepper (if desired)
