Meatless Monday: No Bread Oatmeal French Toast

 

Because I don’t eat a lot of bread, one thing that I miss eating is french toast.  There is just something about a piece of bread, dipped in eggs, covered with fruit, and drizzled with syrup.  I have made french toast with Ezekiel bread, and today I have another version for me and for you.  It is an oatmeal french toast.  It takes a bit longer, but it is definitely worth it.  I think it tastes just like french toast, but with a little more texture.  I made this recipe once and had to make it again immediately after it was finished.  I hope you give it a try and if you do, leave me a comment below or email me and tell me if you enjoyed it!

Base:

2 1/4 cups water

1 1/2 cups oats

Pinch of salt

1/2 TSP Cinnamon

Pinch Nutmeg

Custard:

2 eggs 

2/3 cup milk 

1 TBSP honey

Pinch of salt

1/2 TSP vanilla

1 TSP cinnamon

A pinch of nutmeg

Toppings:

Maple Syrup 

Fruit of your choice

Oatmeal French Toast Ingredients

Oatmeal French Toast Ingredients

For base, place water, oats, and salt in microwaveable safe dish

Microwave on low heat for 12 minutes, or until cooked

Cooked oatmeal

Place oatmeal in 9×9 pan and place in fridge overnight to set

In the morning, mix the custard ingredients well

Pour the custard mix into a shallow bowl or tupperware

Cut the chilled oatmeal into nine equal squares

Dip oatmeal squares into mixture, allow to soak for 30 seconds on each side

Over medium-low heat, melt 1 tablespoon of butter or coconut oil in a non-stick pan

Place 2 slices of oatmeal ‘bread’ at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side

Remove from pan and place on baking sheet 

Repeat with all slices

Bake in oven for 5 minutes per side
