One Pot Wonder: Egg Breakfast

The easiest meals to make are one pot wonders.  Prep in one dish and cook in the other.  This is one of my favorite quick and go to breakfasts (or lunch or dinner) because it is healthy and is a one pot wonder.  You can use whatever veggies you want and top with an egg or two.   Give it a try!


1/2 Cup Chopped Broccoli

1/4 Cup Sliced Cherry Tomatoes

1 Egg

1/2 Avocado

Chili powder, salt, pepper


Preheat oven to 425

Add 1 TBSP EVOO, broccoli, tomatoes, and spices to a bowl 

Mix until combine

Pour into an oven safe dish and roast in oven for 15 minutes



Remove and crack egg over mixture

Ready to go into the oven

Crack the egg into a bowl and then pour oven broccoli and tomato 

Bake in oven for 12-15 minutes, or until white is cooked through

Slice avocado and serve on or next to the egg dish
