Happy National Chocolate Cake Day!

Happy National Chocolate Cake Day!  Of course, I have to celebrate with the perfect chocolate cake.  This recipe, found on the back of the Hershey’s Cocoa box, is my go to chocolate cake.  But, for today, I decided to spruce it up a bit by making it a layer cake (the first I’ve ever made!) and adding wine.  What better way to celebrate National Chocolate Cake Day than with a chocolate cake with wine?! 

My friends work at the Kieu Hoang Winery in Napa and they had given me a bottle of the winery’s 2010 Red Blend.  I had opened the bottle over the weekend and had just enough for the cake and icing.  I hope you give this version of the Hershey’s Chocolate Cake a try!

 

For Cake:

2 Cups Sugar

1 3/4 Cups Flour

3/4 Cups Hershey’s Cocoa 

1 1/2 Baking Powder

1 1/2 Baking Soda

1 TSP Salt

2 Eggs

1 Cup Milk

1/2 Cup Vegetable Oil

2 TSP Vanilla Extract

1 Cup Red Wine

For Frosting:

3/4 Cup Butter (1 1/2 Sticks), softened on counter for 2 hours

1 Cup Hershey’s Cocoa

4 1/2 Cups Powdered Sugar

2/3 Cups Milk

2 TSP Vanilla Extract

2 TBSP Red Wine

Sprinkles for garnish

For cake:

Preheat oven to 350

Combine all dry ingredients in a bowl and mix together

Add all wet ingredients except wine and whisk to combine

Add wet ingredients into dry ingredients and using a mixer, beat on medium speed until well combined

Microwave wine for a minute, or until steaming

Stir into mixture and stir until combined

Spray 3 7-inch baking pans with cooking spray

Pour batter evenly into three pans

Ready to go into the oven

Bake in oven 30-35 minutes, or until wooden pick inserted in center comes out clean (you may have to cook 2 pans first, then the final one by itself)

Cool for 10 minutes, then remove from pans and lace on wire racks

Cool completely

While cakes are cooling, add butter to a large bowl

Beat until softened and add powdered sugar, approximately 1/2 cup at a time

Continue adding powdered sugar until all is combined

Stir in milk and vanilla

Remove 1/3 of frosting and place into another dish

Stir wine into smaller portion of frosting 

Stir cocoa into larger portion of frosting

Remove 1 cake layer from pan and place on plate

If top of cake is uneven, using a large knife, cut cake to form a flat layer

Add 1/2 wine frosting and using a flat spatula, spread until even

Top with another cake layer and repeat process

Place cake in fridge for 1 1/2 to 2 hours until firm

Frost cake with cocoa frosting 

Top with sprinkles
