Cauliflower Lasagna

 I haven’t had lasagna in a very long time, but I was craving the cheesy goodness.  Instead of going traditional lasagna, I decided to try using cauliflower instead of pasta.  Um, heck yes!  The layers do not stay together as well as traditional lasagna, but the taste is the same.  Give this healthier vegetable alternative to pasta a try!

1 pound ground beef, turkey, or chicken

3 cans (8 ounces each) tomato sauce

2 cans (6 ounces each) tomato paste

1 Package Sliced White Mushrooms

2 garlic cloves, minced

2 teaspoons sugar

3 TSP Italian seasoning, divided

1/2 TSP Cayenne Pepper

1 teaspoon salt

1/2 teaspoon pepper

3 eggs

3 tablespoons minced fresh parsley (optional)

3 cups (24 ounces) small-curd cottage cheese

1 carton (8 ounces) Ricotta Cheese

1/2 cup grated Parmesan cheese

3 cups (12 ounces) shredded Mozzarella Cheese, divided

2 Small Heads of Cauliflower

In a large skillet, cook beef (or chicken or turkey) over medium heat until no longer pink

If liquid in pan, drain and add the tomato sauce, tomato paste, garlic, sugar, 2 TSP Italian Seasoning, cayenne pepper, salt, and pepper.

Bring to a boil and reduce heat

While simmering, for 20 minutes, in another skillet, add EVOO to coat bottom

Once hot, add sliced mushrooms (break the larger pieces apart with your hands as you drop the mushrooms into the skillet) and cook until tender

In a large bowl, combine eggs and parsley

Stir in the cottage cheese, ricotta and Parmesan cheese

Core cauliflower and cut into 1 inch thick slices

Spray a 13×9 pan with cooking spray and add a layer of cauliflower, trying to cover as much of the bottom as possible.

Sprinkle spices (1/2 TSP Italian seasoning, salt, and pepper) on cauliflower layer

Pour mushrooms on top of cauliflower

Spread 1/2 meat sauce combination over mushrooms

Sprinkle 1/2 of the mozzarella cheese and top with the cheese mixture

Repeat process, but add cheese mixture firs,t then top with mozzarella cheese

Cover and bake at 375° for 45 minutes.  Uncover; bake 20 minutes longer or until heated through.

Let stand for 15 minutes before cutting.
