So, yesterday was National Watermelon Day and I missed giving you a recipe because I was a bit tired from celebrating my friend’s birthday in Vegas! But, I didn’t want you to feel left out, so I am giving you a recipe today. I think the best way to enjoy a watermelon is to slice it up and eat it, but this recipe is a little bit heartier and is the perfect summertime salad. I hope you give it a try!
1 Cup Cooked Quinoa
1 Cup Diced Watermelon
2 Cups Spinach
2 TBSP Slivered Almonds
2 TBSP Parmesan Cheese (or Feta)
2 TBSP Mint, torn
Assemble ingredients in a shallow bowl or on plate, first starting with spinach
Plate watermelon in middle, then an ingredient in each corner
Top with dressing of choice (I used my EVOO, Apple Cider, and Mustard dressing, but also added a bit of watermelon juice!)
This is a light, refreshing, and healthy salad that you can enjoy all summer long, or what’s left of it any way!
