Thirsty Thursday: Cauliflower, Leek, and Onion Soup

Today’s thirsty Thursday is a bit of a stretch, but I wasn’t about to give you a smoothie with cauliflower in it.  I am serving a cauliflower, leek, and onion soup that you don’t have to use a spoon for!  

1 Package of Frozen Cauliflower

1 Cup of Pearl Onions

1 Leek

1 Box of Chicken Stock

Clove of garlic, smashed 

EVOO

1 TBSP Butter

Salt, Pepper, and Smoked Paprika to taste

Heat cauliflower (and onions if frozen) in microwave safe dish until thawed

While cauliflower is heating, cut leeks in half lengthwise and hold under running water to remove any excess dirt

Cut leeks, cauliflower, and onions add to a soup pot on medium high heat coated with EVOO

Stir in smoked paprika, salt, pepper, and the smashed garlic clove and sauté until veggies are starting to brown

Remember, color in cooking means flavor.  I’m not saying to burn the veggies, but char until there is a bit of color on the veggies

Using an immersion blender, blend veggies and spices until a puree consistency

Add chicken stock and butter, and stir until combined

Soup!

Turn heat to low and simmer until flavors have combined

Spoon into a bowl and enjoy (with a spoon or not!)
