Today marks the final day of cauliflower week! I hope you enjoyed all the recipes as much as I enjoyed coming up and sharing them with you! The final piece to the cauliflower puzzle is a cauliflower egg bake which can be served for breakfast, lunch, or dinner! Follow the recipe below!
1 Small Head of Cauliflower or 1 Package of Frozen Cauliflower
1 TBSP Butter
1/4 Cup Milk
2 TBSP Parmesan Cheese
2 TBSP Shredded Mozzarella Cheese
1 Cup Spinach, pulsed in food processor
2 Eggs
Salt and Pepper to taste
Cooking Spray
Preheat oven to 375
In a microwave safe dish, place cauliflower and microwave until tender
Using an immersion blender, blend cauliflower until creamy
Stir in butter, milk, cheese, spinach, and salt and pepper until combined
Spoon mixture into an oven safe dish sprayed with cooking spray
Using a spoon, make two indentations in the mixture
Crack an egg into each indentation
Bake in oven for 20 minutes, or until egg is cooked through
Spoon onto dishes and top with Parmesan cheese!
