Happy National Candy Corn Day!

Happy National Candy Corn Day!  Today to celebrate, I baked some Candy Corn and White Chocolate Blondies.  Follow the recipe below and enjoy these sweet treats!

1/2 Cup Unsalted Butter (1 stick), melted

1 Large Egg

1 Cup Light Brown Sugar, Packed

1 TBSP Vanilla Extract

1 Cup All-Purpose Flour

1 Cup Candy Corn

1 Cup White Chocolate Chips

Preheat oven to 350

Line an 8×8 inch baking pan, spray with cooking spray, then set aside

In a microwave-safe bowl, melt butter for approximately 45 seconds (or until butter is completely melted)

In a large bowl, whisk in brown sugar  vanilla

Egg, brown sugar, and vanilla mixed

Brown sugar and vanilla whisked

Slowly add the egg (be careful not to scramble it!)

Add flour in 3 sections and stir until just combined

Stir in candy corn and white chocolate chips

Pour batter into pan and smooth the top lightly with a spatula

Bake about 24-28 minutes, or until cake tester comes out clean

(You may want to place a sheet of tin foil on top to prevent surface from browning)

Wait for blondies to cool until cutting (approximately and hour)

Next time I am going to line the pan with aluminum foil to help get the blondies out of the pan and keep the candy corn away from the outside of the pan…like the recipe told me to do so.  This will prevent the bubbly orange goo from forming.  But, even with this, they were delicious!!!
