Meatless Monday-Veggie Burgers

Happy 2014 and I hope everyone had an enjoyable and safe holiday season!  Are we all stuffed, full of sugar, and ready to cleanse and eat healthy?!  I know I am.  Today’s recipe is a great and healthy start to the New Year!  Follow the recipe below for an amazing veggie burger!

1/2 Cup Uncooked Quinoa

1/2 Cup Uncooked Lentils

1 Cup Cooked White Beans

1 Stalk of Celery

2 Cups of Mushrooms

1/4 Onion

1 Cup Diced Sweet Potato

1 Cup Broccoli

1 Small Whole Carrot

1 Cup Diced Pepper

3 Stalks Kale

1 Large Garlic Clove

2 TBSP Crushed Walnuts

2 TBSP Ground Flax Seeds

2 TBSP Oats

2 TBSP Apple Cider

1 TSP Rosemary

1 TSP Thyme

1 TSP Cayenne Pepper

1/4 TSP Nutmeg

Salt and pepper to taste

Dice the onion and celery

Mince the garlic

Add a few tablespoons of EVOO to a large skillet

Once the skillet is hot, add onion, celery, and garlic

While this mixture is cooking, drain white beans and start cooking quinoa and lentils to package’s instructions

Dice the carrot, and add carrot and sweet potato to onion, garlic, and celery cooking

Chop broccoli into bite sized pieces

Add broccoli, mushrooms, and pepper to skillet

Season with salt and pepper

Tear kale into small pieces and add to skillet, along with the spices and apple cider

Let mixture cool while pulsing white beans, quinoa, and lentils a few times in food processor

(some of the beans will still be whole)

Pulse the veggie mixture in food processor until smooth

In a separate small bowl, add flax seeds to 3 TBSP water

Stir to combine veggie, quinoa, lentil, white bean, flax seed, oat, and walnut mixtures  

Mixture should be sticky

Preheat the oven to 400 degrees

Form the mixture into burgers and place on parchment paper lined cookie sheet

Bake in oven for 15 minutes per side

Serve with a side of your choice

I have tried many store-brand veggie burgers, and my homemade version was much tastier than those!  These are definitely going to be a Meatless Monday staple in my house!
