Finally I am back to my regular post schedule (Monday-Wednesday and Friday). So, here is your first Meatless Monday after the Thanksgiving break. I took a few extra days off because of Turkey overload! Today I am making for you a beet salad. Use my roasted beet recipe HERE and then follow the recipe below.
1 Cup Green Beans (can use frozen or fresh)
1/2 Cup Slivered Almonds
1/2 Cup Feta Cheese
Cook green beans in microwave or in oven
Roasted almonds in oven or toaster oven
Combine all ingredients and serve hot, chilled, as a side dish, or as a main meal. If you serve as main meal, you can put over spinach, add black beans, etc.
