As you have probably noticed from my posts, I eat a lot of chicken! So, I decided to give you a recipe that can be made with either chicken or pork! In the pictures below, I used chicken, but the recipe is just as tasty made with pork chops! Enjoy!
1 1/2 pounds boneless chicken breasts OR 1-1 1/2 thick boneless pork chops
8-10 oz. sliced mushrooms
Vegetables of your choice (all or only what you love):
1 cup carrots, cut in 1 inch chunks
1 cup potatoes, peeled and quartered
1 medium onion, cut in wedges
1/2 cup shelled edamame
1/2 cup peas
Sauce:
1 can cream of mushroom soup
1/2-3/4 cup milk or milk and white wine
1/2 cup sour cream
Seasonings for sauce: 1/4 tsp garlic salt, 1/8 tsp onion powder, 1/4 tsp dried thyme, salt & pepper to taste
Preheat oven to 375 degrees
Coat an oven proof, with cover, baking dish
Season chicken breasts or pork chops with salt, pepper, & paprika
Saute breasts/chops in 1-2 tablespoons of olive oil in a medium skillet on medium heat for 1-2 minutes per side
Place chicken/chops in prepared dish
In same skillet saute mushrooms in 2-3 tablespoons of butter or olive oil until tender
Spoon mushrooms over chicken/pork
Add desired vegetables to baking dish – EXCEPT THE PEAS
In same skillet whisk together soup, milk and seasonings. Once combined, stir in sour cream.
Pour sauce over chicken/pork and vegetables
Cover and bake one hour
Add peas, stir, and bake an additional 10-15 minutes
Serve with noodles, rice, mashed potatoes, or steamed green beans
