Until recently I didn’t like spicy foods, but now I can’t get enough red pepper! I put my recipe for spicy chick peas on NewsforChews before, but this spicy chicken and beans is a great, complete dinner!
Preheat oven to 375
1 Packet of Chicken Tenders
1 Can of White Beans
1 Can of Chick Peas
*You can use 2 Cans of White Beans or 2 Cans of Chick Peas instead of mixture of beans instead
3 TBSP Olive Oil
1 TSP Ground Red Pepper
1/2 TSP Red Pepper Flakes
Spray a 12×9 cooking dish with cooking spray
Lay chicken flat in a dish
In a bowl, combine olive oil, ground red pepper, and red pepper flakes
Drain and rinse beans
Stir beans into mixture in bowl
Pour bean mixture and excess mixture over chicken
Cook in oven for 30 minutes
Serve and enjoy!
You can even add some shelled edamame to the beans for a touch of green!
