I love baking for the holidays and Halloween/Thanksgiving cookies are especially one of my favorites. My mom makes THE best pumpkin cookies, and are in high demand…even out of season. For a few years, one of my friends even asked for the cookies for her birthday presents! When I bake the cookies, they are delicious, but somehow don’t taste quite as good as my mother’s. It must be a mother’s touch. But, give these cookies a try and I promise they will turn out amazing, mouthwatering, and won’t leave you disappointed!
1 1/2 cups butter (3 sticks)
1 1/2 cups sugar
2 eggs
1 (15 oz) can solid pumpkin
1 1/2 teaspoons vanilla
3 cups flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1 1/2 teaspoons pumpkin pie spice
1 cup raisins
1 (12 oz) bag chocolate chips
Preheat oven to 350 degrees
Cream sugar and butter until light and fluffy
Add eggs, one at a time, then add vanilla & pumpkin
Mix dry ingredients and add to pumpkin mixture
Stir in raisins and chocolate chips
Drop by rounded teaspoons onto parchment-lined cookie sheets
Bake 12-14 minutes
