I am strange. Why? Well, one reason is my odd and somewhat abnormal love for asparagus. You know when somone asks you if you could eat only one thing for the rest of your life, what would it be? While everyone else answered french fries, steaks, chocolate, and an assortment of other delicacies, I would always answer asparagus. The “huhs” and “whats” and strange looks followed. Hence, one of the reasons I am strange. I usually have asparagus grilled and nothing much but balsamic added, but I am always looking for new and exciting recipes. I found this recipe on either yumsugar.com or fitsugar.com and have adapted it and made it so many times I don’t need a recipe. Try it out and let me know if you have a new favorite food!
2 Bunches of Asparagus
1/2 Cup Roasted Cashews
2 TBSP Hoisin Sauce
Juice of 1 Lime
1/2 TSP Red Pepper Flakes
1 TSP Crushed Red Pepper Flakes
1/2 Container Spinach
Black pepper and salt
Clean and cut asparagus stalks in half length. Sautee asparagus until tender in pot on stove. Fold in spinach until wilted. Add cashews, hoisin sauce, lime juice, both red peppers. Add black pepper and salt to taste. Enjoy!
P.S. I also mix it up with broccoli and/or edamame instead of the spinach.
