Lavender Spritz

One of my neighbors knows I love lavender and brought me a pack of dried lavender. He challenged me to make a cocktail with the lavender and of course I said, challenge accepted! I also love Aperol Spritz so I created this lavender spritz. If you like lavender, you’ll love this cocktail! 

Ingredients:

  • 1 cup water
  • 3/4 cup sugar
  • 1 TBSP dried lavender
  • 2 oz Hendrick’s Gin (or any botanical gin)
  • 1 oz lavender simple syrup⁣
  • 1/2 oz freshly squeezed lemon juice ⁣
  • 3 oz Prosecco ⁣
  • Sparkling water
  • Fresh lavender sprigs, for garnish ⁣
  • Lemon slices, for garnish⁣

Instructions:⁣

  • To make lavender simple syrup, combine sugar, water and dried lavender in pot over medium heat on stove (make sure you stir to dissolve the sugar)⁣
  • Bring to a gentle boil and then turn heat down ⁣
  • Simmer the mixture for 5 minutes ⁣
  • Remove from heat and let cool for 15 minutes ⁣
  • Strain the mixture and let cool completely ⁣
  • To make cocktail, fill cocktail shaker and high ball glass each with ice
  • Add gin, lavender syrup and lemon juice⁣
  • Put top on and shake for about 10-15 seconds or until the shaker gets icy on the outside ⁣
  • Pour over glass filled with ice
  • Top with Prosecco (about 1/2 a mini bottle)⁣
  • Top with a bit of sparkling water ⁣
  • Gently stir to combine⁣
  • Garnish with lavender sprigs and lemon slices⁣
