St. Patrick’s Day Oven Braised Corned Beef & Cabbage

Corned Beef and Cabbage is one of those meals that I love but I only eat it once a year. I remember I used to go over to my Mema and Papa’s house (my mom’s parents) when I was younger to celebrate the day. My Mema was Irish and cooked the perfect Corned Beef & Cabbage. So, this meal is very sentimental to me. 

I usually make Corned Beef & Cabbage for myself in my crockpot but this year I found an oven-braised recipe with mustard and brown sugar that I thought I’d give a try. If you like this food, then look no further because this is the perfect way to cook your Corned Beef and Cabbage.

Ingredients:

  • 4 cups Beef Broth 
  • 2 TBSP Dijon mustard
  • 2 large onions, peeled and cut into quarters (or I use 2 cups of small frozen onions)
  • 6 small red potatoes, cut in halves
  • 3 medium carrots, peeled and cut into thirds
  • 1 Corned Beef Brisket (3-4 pounds with seasoning packet)
  • 2 TBSP packed brown sugar
  • 1 head of green cabbage, cut into wedges
  • EVOO
  • Salt, pepper, garlic salt and other spices of choice

Instructions:

  • Preheat the oven to 325 degrees
  • Stir the broth and the contents of the seasoning packet together in a bowl and pour into a roasting pan
  • Place beef, fat side up in the pan (you can trim some fat but leave a generous amount as this will give the Corned Beef flavor)
  • Spread the mustard on the beef
  • Sprinkle with brown sugar
  • Cover pan 
  • Bake for 2 hours or until internal temperature reaches 195 degrees
  • While corned beef is cooking, line a rimmed cookie sheet with tin foil
  • Remove corned beef from pan, wrap in tin foil and set aside
  • Turn oven to 400 degrees
  • Place onions and cabbage in the roasting pan 
  • Cook covered in oven for 20 minutes
  • While onions and cabbage are cooking, toss carrots, EVOO and spices of choice (about 1/2 TSP each and a pinch of salt) in a bowl
  • Arrange on cookie sheet
  • Do the same with the potatoes
  • Place cookie sheet on bottom rack and cook (with the cabbage and oven pan) for 30 minutes or until potatoes and carrots are tender to touch
  • Using a slotted spoon, remove onions and cabbage and place in serving dish or plate
  • Remove tin foil from Corned Beef and slice in 1/2-inch thick pieces and place on platter or plate
  • Place potatoes and carrots on platter or plate
  • Serve with a side of store-bought Irish Soda Bread (or see below for Irish Soda Bread Muffins)
