During the pandemic, I’ve been ordering and making more comfort food than normal (COVID calories don’t count right?! Eek!) and what besides pasta, is more comforting than a sandwich? I’ve also found myself having zero energy lately so today’s recipe (if you can call it that) is very easy. It’s a classic recipe–BLT and of course I had to add an A. Bacon.lettuce.tomato.avocado–YUM!
Ingredients:
- 2 pieces of hearty bread of choice (I used Food for Life’s Ezekiel Bread but you can use the bread of your choice)
- 2-3 pieces of bacon
- Handful of arugula (or lettuce of choice)
- 1 Globe tomato
- 1/2 Avocado
Instructions:
- Toast bread until lightly browned
- Make bacon (HERE is a Tuesday tip on how I cook bacon)
- Wash and dry tomato
- Cut into 1/4 inch slices
- Cut avocado into slices
- Place one piece of bread on cutting board
- Place slices of avocado on bread
- Top with arugula
- Top with 2-3 slices of tomato (depending on how big the slices are) to cover the entire width and length of bread
- Top with slices of bacon (you can break them apart to get 4 pieces)
- Top with the other slice of bread
- Cut the sammie on a diagonal
*You might have slices of tomato and avocado leftover
BLTA Sammie
