Super Bowl Eats Pt. 2 – Sheet Pan Nachos

The Big Game (aka the Super Bowl) is tomorrow between the Kansas City Chiefs and the San Francisco 49ers. The TODAY show just put out an infographic on the most consumed foods during the game by state and the majority are not a shock–7 layer dip, a variety of buffalo dips and chili. I am a bit shocked that cake is on the list in several states, especially in Texas (what?)! However, I am even more shocked that one food did not show up on any states–nachos! How can they be nowhere to be found?! Well, today’s recipe will change that. It is a simple and easy recipe for sheet pan nachos. Essentially you layer all your ingredients on the sheet pan, bake in the oven, then serve. No need to plate the nachos on a serving dish. Follow along below and you’ll have some happy guests!

Ingredients:

  • Tortilla chips
  • Shredded cheese (I used a mixture of Pepper Jack and Mexican)
  • Tomatoes, diced
  • Olives, diced
  • Onion, diced
  • Frozen fire-roasted corn, thawed and patted dry
  • Black beans (drained, rinsed and patted dry)
  • Kidney beans (drained, rinsed and patted dry)
  • Pickled jalapeños
  • Avocado
  • Sour cream (optional)

Instructions:

  • Preheat oven to 400 degrees
  • Place parchment paper on rimmed sheet pan(s)
  • Lay tortilla chips in a single layer on sheet pan(s)
  • Sprinkle cheeses on top

  • Layer on all other ingredients except olives, jalapeños, avocado and sour cream 

  • Place in oven and bake until cheese is melted, about 8-10 minutes

  • Remove from oven and top with olives, jalapeños, avocado and sour cream (if using)
  • Serve on sheet pan for everyone to enjoy
