Meatless Monday: Cheesy Monkey Bread

Congrats to the Los Angeles Rams and the New England Patriots on winning their respective divisions to make it to the Super Bowl on February 3.  The recipes until then will be all ones you can serve (or take) to a Super Bowl party.

If you know me personally, one of my favorite and most requested recipes to make is my Monkey Bread, which I realized I haven’t even posted on NewsforChews! I’ll be sure to add it to my recipe queue.  But, today I am making a savory version of this monkey bread.  It has a bunch of cheese and butter, so you know it’s healthy (haha).  Follow the recipe below for a gooey, cheesey, goodness! 

Ingredients:

  • 1 Cup Shredded Monterey Jack Cheese
  • 1/2 Cup Shredded Parmesan Cheese
  • 1/2 Stick Cold Unsalted Butter
  • 1 Shallot
  • 3 Garlic Cloves
  • 1 Can Biscuits
  • Salt, Pepper, Dried Oregano, Red Pepper Flakes to taste

Instructions:

  • Heat skillet over medium heat with grapeseed oil just coating the bottom
  • Chop shallot
  • Once skillet is hot, add shallot
  • Preheat oven to 375
  • Remove skin from garlic and using a microplane, grate garlic over shallot
  • Stir in spices
  • Cook shallot and garlic until just turning translucent, then set aside to cool
  • Coarsely shred butter on the large holes of a box grater or chop into 1/4 inch pieces
  • Toss cheeses, butter, and spices in a medium bowl
  • Cut each biscuit into fourths (I use my kitchen scissors–much easier than a knife)
  • Once shallots and garlic have cooled, add to cheeses and butter and stir to combine
  • Reserve 3/4 cup of the mixture
  • Spray a 9×12 baking dish with cooking spray
  • Add a few biscuit pieces to the mixture and toss until the biscuit is covered

  • Add to pan and repeat process until all biscuits are covered

  • Top biscuits with reserved mixture

  • Bake in oven for 30-35 minutes or until the biscuits turn golden brown (if they begin to get too dark, cover with tin foil)

  • Let the cheesy monkey bread cool and serve! You may have to use a knife to cut through
