Healthy Breakfast Cookies

Monday through Friday I typically eat the same things because it is easy to transport to and eat at work.  It consists of hard boiled eggs and fruit or Greek yogurt, nuts, and fruit.  But not going to lie, I sometimes get sick of eating the same thing day after day and week after week.  So, I searched for a healthy, portable, and meal-prep friendly breakfast that I could make and take.  I found these breakfasts cookies with just a few ingredients.  I made a batch on Sunday night and they carried me through the week and even ended up as a mid-day, pre or post-workout snack.  You can always freeze and take one out the night before.  Then, you don’t have to eat the entire batch and the freezer keeps the cookies fresh. Try the below recipe!  If you want some added protein, you can top the cookie with some more nut butter of your choice!

Ingredients:

1/2 cup rolled oats

1 Banana

1/4 Cup Peanut Butter, or nut butter of choice

1/2 TSP Vanilla Extract

1/2 TSP Cinnamon

1/4 Cup Chopped Walnuts, or nuts of choice

1/4 Cup Chopped Dates

Pinch of salt

2-3 TBSP Chocolate Chips

Optional:  1 TSP Turmeric

Healthy Breakfast Cookie Ingredients

Instructions:

Preheat the oven to 350 degrees

Mash the banana with the nut butter until smooth, then stir in all other ingredients until well-combined

Mixing the Ingredients Together!

Ready to form the cookies!

Line a cookie sheet with parchment paper and spray with cooking spray

Using a 1/4 cup or a mini cookie scoop, shape into cookies, and place on cookie sheet

Ready to go in the oven!

Bake for about 18 minutes, or until oats begin to brown

Cookies Cooling!

Let cool 10 minutes before removing from sheet

Ready to Eat!
