Ground Turkey Sweet Potato Skillet

Next week is Stagecoach, a large outdoor country music festival in Indio, California.  This year artists like Chris Lane, Kelsea Ballerini, Jake Owen, Florida Georgia Line, Keith Urban, Kacey Musgraves, and legend Garth Brooks are performing.  Stagecoach also falls on my birthday weekend so naturally, I’m being more conscious of what I’m eating and working out more.  Today’s recipe is a colorful yet satisfying recipe that is most importantly healthy.  Follow the one-pot recipe below!

Ingredients:

2 tbsp grapeseed olive oil

1 lbs extra-lean ground turkey

1 tsp garlic clove, minced

½ cup onions, diced

½ yellow pepper, diced

1 medium sweet potato, diced

Salt, black pepper, red pepper flakes, ancho chili powder (optional), smoked paprika (optional)

½ cup shredded cheese

Sliced Avocado, for garnish

Instructions:

In a skillet, heat oil over medium-high heat

Add ground turkey and garlic

Use a wood spoon breaking up the turkey while it cooks

Stir occasionally and cook for about 8 minutes

Add onions and yellow peppers and cook until onions are soft

Add the sweet potato and spices and stir to combine

Cover the skillet and stir occasionally

If necessary, add 1/8 cup of water to cook the sweet potato faster

When the sweet potato is tender, plate and top with shredded cheese and avocado
