One of my favorite salads is a beet and goat cheese salad, I think it is the perfect mix of creamy, tart cheese with the veggie. So, when Crunchies sent me Freeze-Dried Beets, I knew immediately what to make. Unlike traditional heat drying, the freeze-drying method Crunchies uses ensures that fresh fruits and veggies retain their nutritional value. After harvesting fresh produce is quickly frozen and undergoes a low-pressure drying process. Due to this result, Crunchies products retain most of their nutrients of fresh, whole fruits and veggies. Another added bonus to Crunchies?! The products do not contain added sugar, artificial flavors or coloring, and are Non-GMO and gluten-free.
Follow the recipe below for an easy to assemble, yet healthy appetizer to serve.
1 TBSP Chopped Walnuts
2 TBSP Goat Cheese, room temperature
2 Medium Sized Beets
1 Clementine
1 Bag of Crunchies Freeze-Dried Beets

Ingredients
Preheat oven to 350
Place a sheet of tin foil in a baking dish
Cut beets in half and place on tin foil
Drizzle with EVOO and create a closed pocket
Bake beats in oven for 30 minutes
While beets are baking, peel clementine and cut each segment in half
Remove dish from oven and slice tin foil open with knife
Let beets cool until you are able to touch
Remove skin and slice into small bites
On a plate, place Crunchies and beets
Top Crunchies and beets with goat cheese
Then, top with goat cheese, walnuts, and/or clementine slices
If you serve this appetizer, make sure you serve it right away. If the Crunchies beets sit too long, they will become soggy. Another way is to serve this appetizer is to pour the Crunchies into a bowl, plate the cheese, and allow your guests to create their own bite.
