I saw these Bite-Size Chicken Taco on BuzzFeed and thought that they would be the perfect thing to serve during a Super Bowl party. You can make the tacos a few hours or a day in advance (just don’t refrigerate them or they will get soggy–just put in a ziplock container on the counter), then the rest of the ingredients each take less than 5 minutes to prepare. Serve each ingredient in a bowl so your guests can serve themselves!
Rotisserie Chicken
Buffalo Sauce
Large Tortillas
Circle Cookie Cutter (or I used a peanut butter jar lid)
Guacamole
Shredded Cheese
Salsa, of choice

Mini Taco Ingredients
Preheat oven to 375
Using cookie cutter (or jar and knife) to press or cut the large tortillas into 16 small tortillas
Spray both sides of small tortillas with cooking spray or brush with EVOO
Flip a 12-cup muffin tin over and place a cut-out piece of tortilla in the space between two cups, so that they make a mini taco shape
Bake for 5-10 minutes, or until just turning golden brown and crispy (they can burn quickly, so be sure to check on them every couple of minutes
Shred a rotisserie chicken and toss with BBQ sauce
Place shredded chicken in a large pan over medium-high heat
Serve tortillas, chicken, salsa, guacamole, and cheese in separate bowls so guests can build their own mini tacos
