Tuesday’s Tip: Pat Fish Dry

I am putting today’s tip into use tomorrow, so make sure you come back tomorrow for a recipe to accompany this tip!  I’ve been eating a lot of fish recently and something I do every time before cooking the fish that I never realized I did, is gently patting the fish dry.  If you don’t already do this, begin doing this every time you cook fish (and other meat) as this ensures the excess liquid is removed and will aid in even cooking.  But, do not press hard as you do not want to remove essential fluids that result in flavor and moisture.  Just place a paper towel over the meat and give a quick, gentle pat / press and you are good to cook!
