I can honestly say that today’s recipe is one of my all-time favorite recipes, not just Meatless Monday recipes! It is a hearty, healthy, yet tasty black bean quinoa burger. Trust me, today you will not miss the meat with this recipe!
1 15-oz can black beans, rinsed and drained
1/4 cup uncooked quinoa
1/2 cup water
2/3 cup almond meal (or chickpea flour)
1 tsp Worcestershire Sauce
1 tsp hot sauce
1 large egg
To taste: garlic salt, ancho pepper, smoked paprika, salt
Sides of choice (I served mine over a sweet potato “bun”

Black Bean Quinoa Burger Ingredients
In saucepan, add the quinoa & water, bring to boil
Reduce heat, cover & cook until done, 15-20 minutes
In large bowl, add the black beans & mash using a fork leaving some whole beans
Add to beans the cooked quinoa, almond meal, Worcestershire sauce, hot sauce, egg, and spices
Mix to combine

Mixed Together
Form into 5-6 patties
In a large skillet add 3-4 tablespoons of olive oil, heat to medium heat
Add the patties and cook until browned on both sides and warmed through, about 2-3 minutes
