You guys!! I can’t believe this, but yesterday was National Grilled Cheese Day!! I was so excited to share my asparagus information with you that I didn’t share my grilled cheese recipe. Because of that, I am giving you a recipe for a brie, fig, and apple grilled cheese recipe today. No one says you can’t celebrate a day late, or two days in a row if you celebrated yesterday!
2 Slices of Bread
3 Slices of Brie Cheese
4 Figs or 2 TBSP fig jam
5 Pieces of Thinly sliced Apple
1 TSP Honey, if desired

Grilled Cheese Ingredients
Lay cheese on one slice of bread
Lightly squeeze and flatten figs, if using (or spread fig jam on other slice of bread)

Assembling the Grilled Cheese
Add apples to one side of bread
Drizzle with honey, if using
“Close” bread to form sandwich
Spray the outside side of sandwich with cooking spread
Heat a skillet sprayed with cooking spray over medium-high heat
Once pan is hot, add sandwich and cover with lid
Brown one side of sandwich, flip and brown other side
If cheese is not melted as desired, turn heat to low and continue cooking with lid on until cheese is melted
Remove from pan, cut in half, serve, and enjoy!
