My friends and I shared a breakfast pizza at a local restaurant a few months ago and everything about it was delicious…the crispy crust, the garlicky taste, the bacon, and especially the egg on top. Since you know me, you know I had to recreate it. But, instead of a dough crust, I recreated the pizza with a cauliflower crust. The crust was not as crispy, but then again I didn’t use cornmeal or a pizza stone. But, this breakfast pizza will definitely be on repeat in my kitchen! I hope you enjoy!
Ingredients For Cauliflower Crust:
Nonstick spray
1 Head of Cauliflower
1 large egg, lightly beaten
1 Cup Mozzarella Cheese
2 tablespoons shredded parmesan cheese
Salt, freshly ground black pepper, garlic salt, and cayenne pepper (to taste)
Toppings:
Cooked Bacon, diced
Egg
Spinach, shredded in food processor
Tomato Sauce
Shredded Mozzarella and Mexican Cheeses
(You can add another egg if desired, so each person can have one!)
Line a rimmed baking sheet with parchment paper, and preheat oven to 425ºF
Cut cauliflower into chunks (if not using cauliflower rice)
Steam cauliflower in microwave safe covered dish for approximately seven to eight minutes, or until tender
Using an immersion blender or food processor blend to puree cauliflower and let cool (or you can use a food processor)
Place cooled cauliflower in a clean kitchen towel and squeeze out excess liquid
Mix in the egg, one cup mozzarella, parmesan cheese, and spices

Making the crust
Once combined, pat or form the cauliflower into circle
Spray lightly with nonstick spray and bake for 10 to 15 minutes, or until golden

Ready to add the toppings
Take crust out and start layering on your toppings, first with the tomato sauce, then cheese
Add the cooked bacon and shredded spinach, leaving a circle in the middle
Crack the egg in the middle of the pizza and bake in the oven for 8-10 minutes, or until the whites are cooked

Ready to go into the oven
Remove from oven, cut, and serve!
