I was scrolling through my old recipes and came across my Parmesan crisps (Parmesan cheese baked in the oven to make a crispy Parmesan chip) and I thought why not form that crisp into a taco and fill it. Well, today’s recipe is just that…Parmesan crisp tacos! If you like cheese and tacos, be sure to follow the recipe below!
1 Pound Ground Turkey (or chicken)
1/2 Cup Cherry Tomatoes, cut in half
1/2 Cup Sliced Mushrooms
1/2 Onion, chopped
Taco Seasoning
1 Cup Shredded Parmesan Cheese
Avocado for Garnish
Preheat oven to 400
On a rimmed cookie platter covered with tin foil, spread 1/2 cup Parmesan cheese in a circle, making sure the cheese is connected
Bake in oven for 5-6 minutes, or until cheese is melted and just begins to brown around the edges
Take out of oven and let cool for 2 minutes
Over a pot, place 4 wooden spatulas

Parmesan Crisps
Using a spatula, remove the Parmesan crips and lay over spatula

Parmesan Crisps Cooling
While crisps are cooling, cook ground turkey according to taco’s packaging
In a separate skillet, cook onion, mushrooms, and tomato
Once cooked, add veggies to ground turkey and stir to combine

Ready to assemble
To serve, remove Parmesan crisps and spoon taco mixture into Parmesan taco
Slice and add avocado
Repeat to form all Parmesan tacos
