Super Bowl 50 is this weekend and today’s recipe may be my favorite that I am going to suggest to you. In college, one of my favorite foods to order was cheesy bread from Cottage Inn and I have yet to find a place that makes it quite as good. But, today’s recipe comes pretty darn close. Instead of bread, I am using cauliflower. Smother it with cheese, and you can hardly taste the difference!
1 head of cauliflower or 4 cups cauliflower florets
1 Large Egg
1/2 cup Shredded Mozzarella Cheese
3/4 Cup Shredded Mexican Cheese
1 TSP Italian Seasoning
1/2 TSP Salt, Pepper, and Garlic Salt
Cooking Spray
Marinara Sauce to dip
Ranch to dip

Cauliflower Cheesy Bread Ingredients
Preheat oven to 375
Rinse cauliflower, remove outer leaves, and break or cut into florets if using whole cauliflower
Place florets in food processor and process until “rice” texture
Place “rice” in a microwave safe dish with a lid and microwave for 8 minutes
Remove from oven and let cool until
Place cauliflower rice in a clean kitchen towel
Over the sink, squeeze all excess liquid out of cauliflower–you want the cauliflower as dry as possible!

Place cauliflower in bowl and add spices, egg, and mozzarella cheese
Mix until combined

Prepare a rimmed cookie sheet with tin foil and spray with cooking spray
Dump cauliflower mixture onto cookie sheet and form into a rectangle, about 1/2 inch thick

Cauliflower Mixture Formed
Bake in oven for 15-18 minutes, or until cauliflower just starts to brown

Ready to top with cheese
Remove from oven and top with remaining cheese

Ready to go back in the oven
Place back in the oven and bake for 5-8 minutes, or until the cheese starts to brown

Remove from oven and using a pizza cutter, slice into breadsticks
