Super Bowl Eats: Buffalo Chicken Meatballs

Super Bowl 50 is next weekend and features the Denver Broncos against the Carolina Panthers.  Of course, every one is going to be glued to the television to watch the games, but probably more importantly the commercials.  So, you will definitely need some food to hold you over for the entire length of the game and commercials.  I can’t think of food that says football more than buffalo wings.  I actually don’t like wings, so I decided to make buffalo chicken meatballs.  I made these small and appetizer size, but you can make them bigger if you are serving a dinner style meal.  

For Buffalo Sauce:

1/3 Cup Hot Pepper Sauce

1/2 Cup Cold Unsalted Butter

1 1/2 TBSP White Vinegar

1/4 TSP Worcestershire sauce

Garlic Powder and Salt to Taste

For meatballs:

1 pound ground chicken

1 egg 

1/3 Cup Italian Panko Breadcrumbs

1/3 Cup Shredded Parmesan Cheese

1/2 Onion, diced

1 Clove Garlic

1 TSP Pepper, Salt, Italian Seasonings 

Toothpicks

Bleu cheese crumbles

Bleu cheese

Celery, cleaned and cut into sticks for garnish

For sauce, combine all ingredients in a pot over medium heat

Bring to a simmer while stirring with a whisk

As soon as liquid begins to bubble, remove from heat and stir for 30 seconds

Set aside

Ready to mix the meatballs

Preheat oven to 425

Prepare a rimmed cookie sheet with parchment or tin foil

Spray with cooking spray

Add ground chicken, egg, breadcrumbs, Parmesan cheese, onions, salt, pepper, and Italian seasonings to a large bowl

Grate garlic over bowl

Once buffalo sauce has cooled, pour 1/3 of sauce over mixture

Using hands, mix until well combined

Chill for 30 minutes

Using a tablespoon, measure and form a meatball

Place on cookie sheet

Repeat until entire mixture is formed into meatballs

Bake in oven for 8 minutes

While meatballs are in oven, prepare slow cooker 

Remove meatballs from oven 

Add meatballs to slow cooker and pour remaining buffalo sauce over meatballs

Cook on lowest setting for an hour, or until meatballs are cooked through

To serve, remove meatballs from slow cooker, place a chunk of bleu cheese on meatball, and secure with a toothpick

Repeat with all meatballs

Drizzle remaining sauce over meatballs

Serve with a side of bleu cheese and a bowl of celery
