Happy New Year!!!! I hope you all rung in the new year in a fun, festive, and safe way. Now that it is a new year, you have start the year off right. Every first day of a new year, I always eat pork and sauerkraut. It is a Pennsylvania Dutch tradition and is meant to wish you good luck. Follow the recipe below to help you start the year off with a little luck.
2 1/2 – 3 pound pork center loin roast
EVOO
Seasonings of choice. I used salt, pepper, garlic salt, thyme, smoked paprika, Italian seasoning, and ancho chili pepper
1 can of sauerkraut per 3 people
Preheat oven to 425
Combine seasonings and just enough EVOO in a bowl until paste forms
Coat outside of roast with paste
Place pork in a covered pan and cook in preheated oven
After 10 minutes, turn oven to 325 and continue cooking until internal temperature of pork reaches 170, for approximately another 60-80 minutes
Drain sauerkraut and for last 20-30 minutes add to pan
Remove pan from oven and let stand for 15-20 minutes
Slice pork and serve with sauerkraut and other sides of choice
