This quickly became my favorite burger as soon as I made this recipe! I ate them for lunch and dinner for 2 days straight and even had them for breakfast one day and a snack another. Then, I made the recipe again once I ate all of the burgers, and I didn’t get sick of eating them!
1 Pound Ground Chicken
1 Medium Zucchini
1 Small Shallot
1 Garlic Clove
1 TSP of Salt, Pepper, Cayenne Pepper, Smoked Paprika, and 1/2 TSP Ancho Chili Pepper
Grate zucchini and squeeze excess liquid into a bowl or into sink
Grate shallot and garlic into a bowl and add other ingredients
Using your hands, combine all ingredients until well mixed
Place in fridge for 30 minutes
Using your hand, score mixture into 4 burgers
Heat pan over medium-high heat
Separate each forth in half, so you will have a total of 8 burgers
Form into patties and add to pan
Cook burger 4-5 minutes per side, or until burger is starting to brown
Flip and cook until second side begins to brown as well
Turn heat down to low and cover
Cook until burgers are cooked through, another 5-8 minutes, depending on thickness
Repeat until all burgers are cooked
Top with cheese, on a bun, and/or serve with sides of choice

Chicken Zucchini Burgers topped with cheese and served with broccoli and roasted tomatoes…and of course a glass of wine!
