I hope everyone had a great Christmas and Santa was great to you! For those of you who have had to go back to work, I hope you still have a few holiday parties yet to attend. If you are hosting a party or just want another festive winter recipe, I have a delicious one for you today! Even though I only eat today’s recipe once or twice a year, it is still one of my favorites. It is a frozen peppermint torte. You may say, a frozen dessert during the wintertime?! But, this winter has been very mild, so it is welcomed. And if you have a cold winter, it is the perfect amount of refreshment when you are nestled by the hot fire. Follow the recipe below!
24 oreos
1/4 Cup melted butter
1 8-ounce package cream cheese, softened
1 14-ounce can sweetened condensed milk
25 hard peppermint candies, crushed
3 drops liquid red food coloring
2 cups whipping cream, whipped
Optional Garnishes: whipped cream, crushed and whole hard peppermint candy
Pulse oreos until they are fine crumbs
Stir together first two ingredients until combined
Press into bottom and 1/2 inch up sides of a 9 inch springform pan
Chill for an hour
Beat cream cheese at high speed with an electric mixer until fluffy
Add condensed milk until combined
Add peppermint candy and food coloring
Beat well
Fold in whipped cream using rubber spatula
Pour mixture into a prepared pan
Cover and freeze until firm
Garnish, if desired, and serve.
I didn’t get a final picture because my family ate the torte too fast!! But, that should tell you how much we love it!
