Chicken and Zucchini Pasta with Mustard Cream Sauce

You know I love my spiralizer, so I was very excited to receive the cookbook, 150 Best Spiralizer Recipes.  It obviously has 150 recipes, so it was hard to decide which recipe I would make first, but I decided on a zucchini pasta with mustard cream sauce.  The original recipe calls for tilapia, but I had all ingredients in my fridge but the tilapia.  So, I substituted chicken and it turned out great.  Follow the recipe below.  

3 Zucchini, ends cut flat

2 chicken breasts

1 lime, cut in half

1/2 Cup chicken stock

2 TBSP Dijon mustard

2 TSP ground coriander

2 TSP ground cumin

2 TBSP coconut milk

Salt and Pepper

Preheat oven to 375

Using a spiralizer, cut zucchini into ribbons

Place chicken (or tilapia) in a sheet of tin foil on a baking sheet or dish

Squeeze lime juice over chicken breasts or tilapia

Season with salt and pepper and make a foil packet

Bake in oven for 15-20 minutes, or until chicken is done (tilapia will cook 10-15 minutes) 

In the meantime, in a large skillet on the stove, combine broth, mustard, coriander, and cumin

Bring to a simmer

Stir in coconut milk

Add zucchini and stir for 2-3 minutes, or until cooked to desired tenderness

Using tongs, transfer zucchini to serving plates

Lay chicken or tilapia over zucchini and top with sauce
