Zucchini Boat Pizzas

 A few weeks ago I was in NYC for work and was noshing on NYC pizza, so of course I am craving pizza.  But, I want an at home version and I didn’t feel like making my cauliflower pizza (recipe HERE).  So, because I had a few zucchinis in my fridge, I made zucchini boat pizzas.  Substituting zucchini for the crust definitely saves some calories!  Speaking of saving calories while eating pizza…I always blot my pizza before taking the first bite.  Does that help?  Read THIS article and see what the experts say!

Follow the below recipe for a yummy zucchini boat pizza with an easy homemade tomato sauce!

1 Large Zucchini

1 Pint Cherry Tomatoes

Mozzarella Cheese

Toppings of choice–I used mushrooms and olives

Italian Spices, Salt, and Pepper

Olive Oil

Preheat oven to 375

Cut zucchini length-wise and scoop seeds and some of the flesh.  I used a grapefruit spoon because the serrated edges helped me dig into the zucchini!

Drizzle with EVOO and sprinkle with spices

While roasting zucchini in oven for 10 minutes, drizzle EVOO into a saucepan on the stove on medium-high heat

Once hot, add tomatoes and cover for about 6-8 minutes or until the tomatoes begin to burst

Add spices and crush burst tomatoes to form sauce

Take zucchinis out of oven and spoon tomato sauce into zucchini boats

Turn oven to broiler setting 

Top zucchini with cheese and toppings

Place in oven for 4-5 minutes or until cheese begins to bubble and brown

Remove from oven and cool for a few minutes before serving

Topped with cheese, olives, and mushrooms

I know it isn’t NYC pizza, but it is a healthy and yummy alternative.  I think making your own tomato sauce really helps!
