Halloween is just around the corner and today’s recipe is going to get you into the fall spirit if you aren’t there already. Obviously apples are abundant during the fall, so what better to start your week off than a baked apple dessert? I usually slice my apples, toss them with cinnamon and sugar, and microwave for a few minutes until they are tender. But, today’s recipe is a baked apple recipe called hasselback apples. You cut slits into the apple and fill those slits with sugary goodness then bake in the oven. Follow the recipe below!
2 large firm apples (I used Pink Lady)
3 tablespoons brown sugar, divided
2½ tablespoons butter, melted and divided
¾ teaspoon ground cinnamon, divided
2 tablespoons old-fashioned rolled oats
1 teaspoon all-purpose flour
¼ teaspoon kosher salt
1½ cups low-fat Greek Yogurt
1 TSP Vanilla
1/2 TSP Cinnamon
OR 1 1/2 Cinnamon Ice Cream
Preheat oven to 400°
Peel apples and cut in half
Core apple and starting at the outermost edges, cut most (but not all) of the way through each apple half at 1/8-inch intervals
Spray an oven safe baking dish with cooking spray and place apples with the cut side up
In an microwave safe dish place 1 tablespoon butter and microwave for 15-20 seconds or until butter is slightly melted
Stir in 1 tablespoon sugar and ½ teaspoon cinnamon until combined
Brush mixture evenly over apple
Cover pan with foil and bake for 20 minutes
Remove foil and bake for 10 minutes more minutes or until apples are tender
Remove pan from oven; cool 10 minutes
Add remaining 1 1/2 tablespoons of butter to microwave safe dish and microwave for 15-20 seconds or until butter is slightly melted
Combine remaining 2 tablespoons sugar, remaining ¼ teaspoon cinnamon, oats, flour, and salt and stir until combined
Carefully fan open apple halves and spoon oat mixture evenly over apples
Bake for 10 minutes
Combine yogurt, vanilla, and cinnamon in bowl and stir until combined
Serve with Greek yogurt mixture or ice cream
