Happy National Oatmeal Day!

You get two posts today because I love you that much!  Not only is it Thirsty Thursday, but it is National Oatmeal Day!  I have made overnight oats before ( but for today’s recipe I didn’t use chia seeds and I added the fall touch of choice–pumpkin.  I hope you give this recipe a try!

Pumpkin Overnight Oats:

1/2 Cup Milk (I use almond)

3/4 Cup Oats

1/2 TSP Vanilla

1 TSP Cinnamon

1 TSP Pumpkin Pie Spice 

1/4 TSP Ground Nutmeg

2 TBSP Pumpkin Puree

Apple slices and pumpkin seeds to garnish

Combine the first 7 ingredients in a mason jar (or another airtight container) 

Stir or shake (with the lid on) the container until all ingredients are mixed thoroughly

Store in fridge overnight

In morning, pour oats into a bowl and top with apples and pumpkin seeds
