Meatless Monday: Overnight Oat Pancakes

Happy Monday!  Did everyone have a great weekend?  I sure did.  I went back to Ann Arbor, Michigan, and got to see a few of my best friends, watch a field hockey game, and see Jim Harbaugh’s first win as the Michigan football head coach!

After that great of a weekend, I wanted to give you that great of a recipe.  This Meatless Monday recipe will be a great start to your week and has quickly become one of my favorite breakfasts!! I love overnight oats and/or overnight chia pudding, but sometimes I just don’t like the consistency.  So, I created this recipe by dumping my overnight oats into my blender, adding a few ingredients, and making pancakes.  I believe if you had a side by side taste test with these pancakes and the traditional pancake, you couldn’t tell the difference.  I hope you give this recipe a try!

2 Cups Oats

2 Cups Milk (I used almond) 

2 TBSP Cocoa Powder

2 TBSP Honey

2 TSP Cinnamon

2 TSP Baking powder

1 t. Vanilla

2 Eggs

Pinch of salt

Combine oats, almond milk, cocoa powder, honey, cinnamon, and vanilla in a bowl and transfer to a container that can be sealed

Place in fridge overnight

In the morning, place overnight oats in a blender and pulse until a smooth consistency

Add the rest of the ingredients and pulse until just combined (batter will be a little lumpy)

Heat a skillet to medium-high heat

Spray with cooking spray or drizzle a small amount of EVOO into pan

When skillet is hot, pour about 1/4 cup batter into the pan

When the pancake starts to bubble, flip

Repeat process until all of batter is cooked into pancakes
