Today’s recipe comes to you from Dr. Ian Smith. I had a piece of salmon and a grapefruit and was looking through The Shred Diet Cookbook and found a grapefruit honey glazed salmon. Perfect. It is easy, healthy, and a quick recipe to make for a mid-week dinner. Follow the recipe below!
Four 6-ounce boneless salmon fillets
1 TBSP Honey
1 TBSP Grapefruit Juice
1/2 TSP Grapefruit Zest
1 TSP EVOO
1/2 TSP Dijon Mustard
Salt and pepper
Cooking Spray
Preheat oven to 400 degrees
Coat a baking dish with cooking spray
Place salmon in the baking dish and season with salt and pepper
In a small bowl, whisk together the honey, grapefruit juice and zest, olive oil, and mustard until thick and emulsified (mine was a little thinner than expected)
With a pastry brush, brush the glaze on the exposed salmon and drizzle any extra over the fish
Bake until the salmon is flaky and just barely pink in the center (10-12 minutes)
Serve warm and with sides of choice
