Zucchini Roll-Ups!

Happy National Zucchini Day!  As promised yesterday when I posed about the Zucchini Brownies (wait whatttt?  yep find that recipe HERE!) that another zucchini recipe would be coming today.  This is a great main dish that is hearty, healthy, clean, and visually beautiful.  It does take some time (about an hour is letting the zucchini dry), but it is worth it in the end.

4 Zucchinis (one yellow and one green for the color)

1/2 Cup Diced Onions

1/2 Cup Roasted Red Peppers (from 

Spinach

Goat Cheese

Shredded Chicken

1 Jar of Tomato Sauce

Garlic Salt, Pepper, and Cayenne Pepper

Mozzarella Cheese 

Ingredients

Using a mandolin, slice zucchinis to be approximately 1/4-inch thickness

Set a wire rack over newspaper topped with paper towels and/or a kitchen towel

Sprinkle each side of the zucchini with salt and let sit for about 30 minutes on each side

Pat each side of zucchini until dry

To assemble zucchini, first sprinkle with garlic salt and pepper

Preheat oven to 350

Spread goat cheese and sprinkle with cayenne pepper

Top with spinach, a strip of pepper, a few pieces of onion, and a few shreds of chicken

Roll zucchini over stuffing and place in 9×13 baking dish

(At this point you can pour tomato sauce into baking dish and place zucchini rolls on top–I obviously did the reverse.)

If you added tomato sauce to the bottom of the dish before placing zucchini rolls, top with mozzarella cheese 

If you didn’t add tomato sauce, pour tomato sauce in between zucchini rolls and top with cheese

Bake in oven for 35-45 minutes, or until cheese starts to brown

Notes
  1. If your roll-ups do not stay before cooking, you can secure them with a toothpick. Just make sure you soak the toothpicks for 15-30 minutes so they will not burn in the oven. (if they do start burning, remove them from the zucchinis)
