Dark Chocolate Blondie Bars

On Monday, it was my friends’ (who are triplets!) birthday so we celebrated at Rosenthal Wine Bar and Patio over the weekend.  And of course I had to bring dessert, so I decided on blondie bars because I felt that they would travel well and stand up to the heat–they would just melt enough in the sun!  Typical blondies call for white chocolate chips, but I don’t like white chocolate (it isn’t even chocolate!), so instead I used dark chocolate chunks.  It was the perfect combination of the brown sugar, chocolate, and butterscotch.

I hope next time you need an easy transportable dessert you give these a try!

2 1/4 cups flour

1 teaspoon baking powder

1/2 teaspoon salt

1 cup (2 sticks) butter, softened

1 3/4 cups packed light brown sugar

2 large eggs

2 teaspoons vanilla

1 cup coarsely chopped toasted walnuts or pecans

1 cup butterscotch chips

1 cup white chocolate chips–I used chocolate chunks instead!!

Extra:  butterscotch and white chocolate chips to sprinkle on top

Preheat oven to 350 degrees*

(*If using a glass pan, decrease the temperature to 325 degrees)

Lightly butter or spray a 13×9 baking pan

In a bowl, combine the flour, baking powder and salt, whisk to “sift” the dry ingredients and set aside

Cream the butter and brown sugar with an electric mixer until light and fluffy

Beat in eggs, one at a time

Stir in the dry ingredients, nuts, butterscotch chips & white chocolate chips or chocolate chunks

Spread in the prepared pan

Sprinkle the top the with extra butterscotch and white chocolate chips

Bake for 28-35 minutes, or until edges just begin to brown and pull away from sides
